Signature dishes that stood out on the menu

Malhotra notes, “The Ambani wedding reception showcased a remarkable array of signature dishes and specialty items. From the iconic to the exotic, the menu was a culinary journey.”

A highlight, she says, was undoubtedly the presence of the Kashi Chaat Bhandar, serving a delectable variety of Banarasi chaats, “transporting guests to the heart of Varanasi.” The Banarasi paan stall offered a sweet and aromatic conclusion to the meal.

Another unique touch was the inclusion of Kashmiri Nadru Yakhni, a flavourful delicacy showcasing the rich culinary heritage of Kashmir.

Venturing beyond Indian borders, the reception offered a taste of Indonesia with a dedicated coconut-based menu, introducing guests to new and exciting flavours.

“The dessert spread was a visual and gustatory delight, featuring curated creations that were as pleasing to the eye as they were to the palate,” says Malhotra.

Incorporating tastes or family traditions into the food selection

Malhotra says, “The Ambani family, known for their opulent lifestyle and deep-rooted Indian heritage, undoubtedly infused their tastes and family traditions into the wedding reception menu.”

While specific details about their private preferences remain undisclosed, here are some potential ways their culinary legacy might have been incorporated:

Gujarati Roots: Given the family’s Gujarati origins, it’s likely that traditional Gujarati dishes were given a gourmet twist and featured prominently.

Dietary Preferences: The family’s dietary preferences, whether vegetarian, vegan, or specific dietary restrictions, would have been carefully considered in the menu planning.

Regional Indian Cuisine: To showcase the diversity of India, the menu might have featured dishes from the family’s ancestral hometowns or regions they hold dear, like Varanasi.
