Ditch the sugar with Chef Kunal Kapur’s cold coffee recipe with a refreshing twist

Celebrity chef Kunal Kapur has once again caught the attention of food enthusiasts with his innovative take on a classic beverage: cold coffee. Renowned for his culinary expertise and creativity, chef Kapur introduced a refreshing twist to the traditional cold coffee by infusing it with the unique flavour of jaggery.

Jaggery — a traditional sweetener made from concentrated sugarcane juice or date palm sap — is widely used in Indian cuisine for its distinct taste and health benefits. In an Instagram post, chef Kapur shared the recipe of jaggery cold coffee. Check it out below.

Ingredients

*2 cups of chilled milk
*1 1/2 tablespoons of instant coffee powder
*3 tablespoons of jaggery powder
*1/2 teaspoon of vanilla extract
*2 tablespoons of chocolate sauce

Method

1. In a blender, combine the chilled milk, instant coffee powder, jaggery powder, and vanilla extract.
2. Blend all the ingredients until smooth.
3. Take a glass and pour in the chocolate sauce.
4. Use an electric whisk to create swirls with the chocolate sauce inside the glass.
5. Pour the blended cold coffee into the glass.
6. Serve cold, accompanied by cookies.

Beyond its delicious taste, jaggery cold coffee also offers potential health benefits. Citing research, Manvi Lohia, registered dietician and head of holistic health and international business at Ekaanta, said that a study published in the Journal of Food Processing and Technology found that jaggery contains vitamins and minerals such as iron, magnesium, potassium and calcium, which are almost non-existent in refined sugar. “The nutrients help improve digestive health, enhance immune function, and increase energy levels.”

Additionally, Lohia pointed out that jaggery aids digestion by stimulating the secretion of digestive enzymes. “It can promote bowel movements, making it a suitable choice for preventing constipation and flatulence,” she said, adding that anecdotal evidence suggests that the magnesium content in jaggery can significantly benefit intestinal health.

Another important aspect of jaggery is its glycemic index that is slightly lower than that of refined sugar. “This suggests that jaggery releases glucose into the bloodstream more slowly, offering a steadier source of energy and making it a marginally better option for blood sugar control,” Lohia noted.

However, despite its benefits, Lohia mentioned that it is important to remember that jaggery is still a form of sugar and should be consumed in moderation. “Its calorie content is similar to that of refined sugar, and excessive consumption can lead to weight gain and other health issues,” she concluded.
