Christmas special: How plum cakes have evolved over time

The recipe for plum cake has evolved over the years, adapting to regional preferences and ingredient availability. Originally, it was a rich fruitcake with plums, dried fruits, and nuts. However, variations emerged as people experimented with different ingredients and techniques. Some incorporated spices like cinnamon and nutmeg, while others added alcohol, such as rum or brandy, for flavour. In modern times, there’s a wide range of plum cake recipes, accommodating dietary preferences, such as veganism or gluten-free. “Additionally, creativity has led to diverse interpretations, including lighter versions and innovative twists on traditional recipes. Despite these changes, the essence of plum cake as a symbol of festive indulgence and celebration remains intact,” said patisserie chef, Prajit P Kumar, The Ashok.

Kumar emphasised that plum cake holds significance during Christmas due to historical and cultural reasons. “It is an age-old ceremony practiced in traditional Christian households. In the 17th century, when it marked the arrival of the harvest season, lots of fruits and nuts were harvested and prepared to go into the making of the traditional plum cake. Fresh fruits, dried fruits, and the grains that they had harvested would be mixed and soaked in alcoholic fruit juices and wine. Making a rich plum cake with these ingredients became a symbol of prosperity and celebration. Every member in the family would be part of this unique ritual of baking the festive fruit cake.”

These gatherings were symbols of their unity, hard work and camaraderie. Over time, this tradition spread, and the association of plum cakes with Christmas festivities persisted. “The dense and flavourful plum cake became a staple during the holiday season, symbolising joy and abundance. They took great pride and joy in gifting the cake mixes so that everyone could taste their unique,” said Kumar.

Due to the belief that they contain soothing and warming qualities, plum cakes are a favourite dessert during Christmas celebrations and are appropriate for the chilly winter months, added chef Danish Khan, executive pastry chef, Conrad Pune. “Since individuals fasted in the weeks before Christmas to prepare their bodies for the excess on Christmas day, plum cake has been a part of Christmas traditions since the Middle Ages. Dried plums are soaked in brandy or rum for several months, giving plum cakes their thick structure and somewhat bitter flavour.”

What is the recipe to make plum cake at home?

While some chefs and home bakers are always experimenting with recipes, Khan thinks that classic and authentic recipes must remain the same.

For a homemade plum cake, you can try this recipe.

Ingredients

1 cup – All-purpose flour
1/2 teaspoon – Baking powder
1/2 cup – Salted butter, softened
1/2 cup – Brown sugar
2 large no – Eggs
1/2 teaspoon – Mixed Spice powder (Garam Masala Powder)
1 teaspoon – Vanilla extract
1/4 cup – Milk
1 cup – Mixed dried fruits (plums, raisins, currants, etc.)
1/2 cup – Chopped nuts (walnuts or almonds)
2 tablespoons – Rum or brandy (optional)

Method

*Preheat your oven to 325°F (160°C). Grease and flour a cake pan.
*In a bowl, whisk together flour, baking powder and Garam Masala Powder.
*In another bowl, cream together the butter and brown sugar until light and fluffy.
*Beat in the eggs one at a time, then add vanilla extract.
*Gradually mix in the dry ingredients, alternating with milk. Stir in the dried fruits, nuts, and optional rum or brandy.
*Pour the batter into the prepared pan and smooth the top.
*Bake for 45-55 minutes or until a toothpick inserted into the center comes out clean.
*Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
