From the beloved gajar matar ki sabzi to the decadent gajar ka halwa, carrots become the undisputed stars of our seasonal culinary repertoire. Yet, amidst the diverse array of dishes featuring this root vegetable, a lingering question often remains — how can we keep our carrot-centric recipes not just delicious, but also healthy?

Enter celebrity chef Kunal Kapur, who, in a recent Instagram post, shared a recipe that strikes the perfect balance between nutrition and flavour — a homemade carrot spread. This versatile creation can serve as a zesty dip or be generously spread on paranthas and breads, adding a burst of seasonal goodness to every bite.

Ingredients

  • 2 cups sliced carrots
  • 1 cup orange juice
  • 2 tsp ginger (adrak)
  • 1/2 tsp black salt (kaala namak)
  • Salt to taste
  • 3/4 tsp chili powder
  • 2 tbsp butter
  • 1 tsp roasted cumin (jeera)

Method

  1. Begin by placing sliced carrots in a pan, followed by freshly squeezed orange juice.
  2. Switch on the flame and add ginger, black salt, salt, and chili powder to the mix.
  3. Allow the ingredients to meld by boiling the mixture. Cover the pan with a lid and let it simmer for 20 minutes.
  4. Watch as the liquid evaporates, leaving behind tender, flavour-infused carrot slices.
  5. Add butter to the pan, generously sprinkle roasted cumin, and toss the ingredients together.
  6. Once the buttered carrots have reached a harmonious blend, transfer them to a blender, creating a velvety puree.

Voila! With just a few simple steps, your homemade carrot spread is ready.

In a previous interview with indianexpress.com, chief clinical nutritionist at Manipal Hospital, Bangalore, Vani Krishna explained that half a cup of carrots can provide you with a host of vitamins and minerals important for the body. They are rich in antioxidants, have anti-carcinogenic properties, protect eyesight as well as help in digestion.
