All you need to do is pour some water over the lid which is used to cover the vegetable. This technique, as per experts, not only cooks dry vegetables nicely and uniformly but also adds loads of flavour.

Adding water to the lid of a vessel or kadhai while cooking dry vegetables is a culinary technique used to create steam within the cooking vessel, shared Chef Shipra Khanna. “This steam helps to create moisture, allowing the vegetables to cook evenly and prevent them from drying out or sticking to the bottom of the kadhai. It also helps to infuse flavours and maintain the desired texture of the vegetables. Overall, it’s a method to enhance the cooking process and ensure delicious results,” said Khanna.

Agreed Sushma PS, chief dietician, Jindal Naturecure Institute who said that the production of steam in the pot assists in cooking the vegetable faster and more evenly. “When steaming vegtable or wanting to make sure they keep their moisture and nutrients, this method comes in handy,” Sushma said.

Experts urge that it’s a healthy way to cook because the steam from the water helps to soften the vegetables without using a lot of oil or butter. “Keeping the lid on also helps to retain moisture and heat inside the pot, which can speed up cooking and protect the vegetables from drying out which can happen if there is no cover,” Sushma told indianexpress.com.

What to keep in mind?

You must be cautious when adding water as too much water can lead to overcooking. “Vegetables could become overcooked or even boiled instead of being steamed which happens due to the use of too much water. Generally speaking, you want to add just enough water to produce steam,” Sushma said.
